Thai Pineapple & Cashew Stir Fry

Ingredients

Peppers
Carrots
Garlic
Pineapple
Green Finger Chillies
Fake Chicken / Tofu / Satian
Honey
Soy Sauce
Rice Vinegar
2 TeaspoonsCornflour
Broccoli
Cashew Nuts
Spring Onions
  1. In a wok or deep frying pan stir fry some peppers and carrots with garlic (I like it strong so at least 2 cloves). Then add pineapple chunks and a couple of green finger chillies chopped. Add your choice of protein (fake chicken, tofu, satian).
  2. Then add your sauce. Honey, soy sauce and rice vinegar straight in to the pan. Make sure the sauce is bubbling then add a cornflower slurry (two teaspoons of cornflower mixed with water) to thicken up the sauce. Add broccoli florets and stir. Simmer.
  3. Under a hot grill toast some raw cashews till golden.
  4. Chop some spring onions and add them and the cashews to the stir fry. Serve!
