Beer Battered Tofu

300gPlain Flour
1 BottleGood Beer
1 200g BoxTofu
1/2 PacketSeaweed
500mlCooking Oil
Smoked Paprika
Salt & Pepper
Garlic Granules
  1. To prepare the tofu for this dish, the best method is to use a firm tofu. Squeeze the moisture from the tofu (you can use a press/clean kitchen towel) and then freeze. Defrost the tofu and repeat the process three times. This will give the tofu a firm and flakey texture. When ready, slice the tofu in to slim slices.
  2. Prepare the batter using plain flour in a jug, seasoned with smoked paprika, salt & pepper and garlic granules. Add beer or soda water to the mix whilst carefully whisking (try not to knock out too much air) till the batter is the consistency of double cream.
  3. Cut Nori seaweed to the size of your tofu slices and lay on one side of the tofu.
  4. Coat the tofu and seaweed in batter and drop in to a heavy bottomed skillet/frying pan and deep fry until crispy and golden.
  5. Drain on some paper towels before serving, and keep in the oven if you need to wait for other elements of your meal to be ready.
